Sitemap is basically a page that gives details of all the category and the sub-category present in your website.
Adding sitemap will help to easily navigate your site making it easy to search for a particular page user are searching for.
You can either use html or xml sitemap.
HTML Sitemap comprises of single page that gives all the links of the web pages of any website.
XML sitemap informs the search engine about the number of pages present on your website, easy for search engine to index it.

A sitemap is a file where you can list the web pages of your site to tell Google and other search engines about the organization of your site content. Search engine web crawlers like Googlebot read this file to more intelligently crawl your site.

Google has confirmed that “a sitemap can improve the crawling of your site,” especially if you have a large site, one with a lot of content, a new site, or one that uses rich media content.

Html and XML both sitemap is important for website.

I've got neither and I do just fine.

A badly build XML sitemap where the priorities are all set to the default can kill your ranking.

    Why?

If a site is already being indexed by the search engines an XML sitemaps adds no value.

There are actually a couple of different types of sitemaps, such as a visual one that you can create before building a website, but we’re going to focus on the one that is most important for SEO.

Sitemap is listing all the categories with its sub-categories present in a website, easy for users to navigate the page they want to go through.
HTML and XML sitemaps are the types.
In HTML sitemap all the list is present in single page which can be added manually
In XML Sitemap, the website full page detail is given to be indexed by search engines.

Sitemaps are models of site content designed to help users and search engines navigate the site. A site map can be a hierarchical list of pages organized by topic (with links), an organization chart, or an XML document that provides instructions to a search engine crawling robot.

    Sitemap

When a site map is for users to use, it's just a plain HTML file that contains a list of all the main pages on the site.

In the context of a search engine, a site map (also known as a sitemap.xml file) helps the search engine crawler index all pages on the site. Although the site map does not guarantee that every page of the site will be crawled, the main search engine will recommend them.

Sitemaps are especially important for sites that use Adobe Flash or JavaScript menus that don't include HTML links. Google launched Google Sitemaps to help web crawlers find dynamic pages, which are often missed. This protocol is also supported by Bing and all other search engines.

After submitting the Sitemap to Google, Bing, and any other relevant Sitemaps, we will receive useful information telling us if certain pages in the Sitemap are inaccessible and the number of pages we submitted are actually indexed .

You can use Sitemaps to provide information about specific types of content on a webpage, including video and image content. E.g:

Sitemap video entries can specify video runtime, category, and age suitability ratings.
Site map image entries can include image themes, types, and licenses.
Does the site need a Sitemap?
If your site's webpage links are correct, our web crawler can often find most of your site's content. Even so, Sitemaps can improve the crawl rate of your site, especially if your site meets one of the following criteria:

The website is very large. As a result, search engine web crawlers may ignore crawling of some of your new or recently updated pages.
The website has a large content page archive that is isolated or not linked to each other. If your website pages don't naturally reference each other, you can list them in your sitemap to make sure that search engines don't ignore some of your pages.
The website is new and there are almost no external links. Search engines and other web crawlers crawl the web by tracking links from one page to another. Therefore, if no other website links to the search engine, the search engine may not be able to find your page.
Sites use rich media content, appear in news in Google search engines, or use other sitemap-compatible annotations. Most search engines can include other information in the site map as appropriate, where appropriate.

No it doesn't. Google very clearly says in their guidance that it doesn't.

The sitemap that you upload on the root of the website is called XML sitemap. It helps Google to search and visit URLs of the websites. It also should be submitted to Google webmaster.
