What color of theme appeals to you the most? For me it is the ones with a lot of gray and white, yet have a nice color balance. Gray and white match with basically every color.

You might have noticed that I like blue and white, for me they are professional and user-friendly colours and it is easy to read black text against a white background.

White Black and Blue are indeed solid and "professional" colors, so to say.
In picking the color scheme for my projects I usually use Adobe's Kuler. http://kuler.adobe.com

Well I feel I very much depends upon the main theme and the nature of the business that your website carry.
For a florists website, white or Grey, could be the least option, but it could be more catch by using light pink, lime, or mauve.
For a fashion clothing website, white and Grey gives a trendy look, nit exact white but the off white.

For me, I do like a color scheme using light and dark Red or Blue.
Black with white doesn't appeal to me that much.

Yeah the Grey color is the best, matches with all the other light colors.

Last week i just painted the ceiling of my room white and put the carpet of grey color , that was very good contrast...

I prefer blue styled themes, such as BAF, however I think blue is starting to become overused because I see it on so many forums I visit. If used in a good way, I think green/grey can work together.

That's a combination that I also feel can work great and it does appear to be getting more popular. I like a light grey and a sort of lime green together.

I think that light gray works real well with everything...especially with a darker color with is, such as a blue or green. I am seeing more green than about one year ago, but blue is still holding up :p I think the reason there is a lot of blue is because it is really calming.

Using a different shade of blue will definitely help.
I think blue is popular because it's really cool in the eyes.

I like blue a white tool, it looks cool and professional. Microsoft and Google use blue as their corporate color.

Usually Dark ones with a clean look or Crazy Colours on a Black background making it look abstract.
