    Ice Cream Manufacturing Unit

    (capacity: 500 liter per day to 10000 liter per day)

    Introduction: Prevention of Food Adulteration (PFA) Rules, 1955 define ice cream as a frozen product that contains not less than 10% milk fat, 3.5% protein, 36.0% total solids, and 0.5% permitted stabilizer and emulsifier. Indian ice cream industry is currently estimated to be worth INR 20,000 million, growing at a rate of approximately 12%. Besides selling ice cream through kiosks, parlors and push carts, a significant part of the revenue comes from party, event and corporate sales.

    Ice Cream Science: There are three categories of ingredients in the ice cream mix: dairy, sweeteners, and additives. Milk, cream, and non-fat milk solids make up the dairy portion of ice cream. Sucrose is used to sweeten the mix, and stabilizers and emulsifiers are added to give the ice cream the desired body and mouth feel. Also present in finished ice cream is air. Standard ice cream contains an equal volume of mix and air.

    Production line equipments: The manufacturing process of the ice cream facility is broken down into 7 steps: raw material reception & storage, base mixing & standardization, homogenization & pasteurization, aging, flavor addition & continuous freezing, packaging, and finally hardening.

    Relevant production line equipments of prescribed standards cost around INR 0.6-0.8 million for capacity 500 liter per day. Capacity can go up to 10000 liter per day where cost of relevant production line equipments could cost around INR 8 million.

    In addition to main production line equipment you need following utilities:

    Refrigeration: An optimized ammonia refrigeration unit has to be designed to utilize three temperatures -45.6 C for the hardener system, -40.0 C for the continuous freezer system, and -34.7 C for and the cold storage room.

    Cold Storage: Warehouse should be able to hold 2-3 months of production. Its capacity should be optimized according to market demand and inventory needs.

    CIP system and wastewater treatment plant: Wastewater from the facility is captured and treated to a purity such that it can once again be used in this process.

    Steam generation: Low-pressure steam will be used for pasteurization, jacketed heating of the mixing equipment, and to heat water for equipment cleaning.

In milk processing plant we can either sell packaged milk or produce various milk products e.g. Yoghurt, Cheese, Flavored Milk, etc. We can deliver our consultancy services to setup small scale Mozzarella Cheese and Bakery also. It would be worthwhile if you have your own retail outlet in addition to wholesale selling to others.

    While we deliver our consultancy services we make sure that you have well established and optimized production process and its know how. This is crucial for startups.

    At the time of commissioning of plant our engineer will stay there for one month till your production staffs are well versed with operations of machines.

    Production plant design is unique and accordingly we provide blue print layout with civil construction cost estimate. We dont want you to be harassed through answering flurry of questions by bank authorities hence will prepare sanction-able project report for you.
